Cake-Mix-Cookies
Cake-mix-cookies are so easy and delicious. The pumpkin spice and picnic brownies are on the top of my favorites lists. I'd tried some cake-mix-cookies that friends of mine had made but I could never remember the recipe so we came up with our own (except the brownies) I had 3 or 4 lemon and spice cake mixes just sitting forever on my shelf since John and the kids usually vote for chocolate or maybe a nice buttery yellow cake(I almost always use melted butter or margarine instead of oil-so they're very moist and extra tasty) These recipes are a great way to use up extra cake mixes you have on hand that just seem to languish on the back shelves. It's also a great way to easily try fruit puree as an oil substitute.
Spice Cake Mix Cookies
1 spice cake mix1/4 cup shortening 1/4 cup pear butter( applesauce or pumpkin or fruit purees) 1 egg ( raisins or chocolate chips optional) Mix well and drop on greased cookie sheet. Bake at 350 degrees for 10 minutes.
Lite Lemon Cookies
1 lemon cake mix1/2 cup butter 1/2-3/4 cup applesauce 3 eggs Mix well and drop on greased cookie sheet. Bake at 350 degrees for 10 minutes. Cool for 5 minutes before removing from sheet.Sprinkle with powdered sugar or frost with light glaze- mix milk into small bowl of powdered sugar. Cream cheese frosting would probably be good too with some extracts.
Picnic Brownies
This is a recipe that my mom got from her friend Judy Hill. I made them for a cookie exchange and they were definitely raved over!1 pkg. chocolate cake mix 1/3 cup softened butter 2 eggsMix together cake mix, butter and 1 egg. Press into the bottom of a greasedor sprayed 9x13 pan 1 (14) oz can sweetened condensed milk1 tsp vanilla 2 cups chocolate chips 1 1/2 cup coconut Mix together the other egg, milk, vanilla, chocolate chips and coconut. Spread mixture over cake mix. Bake at 350 for 35 minutes. Enjoy! Mom
