Healthy-Oatmeal-Cookies
These healthy-oatmeal-cookies have an almost malty sweetness with just the right combo of spelt, cane sugar and real butter. 1 cup spelt flour 1 teaspoon baking powder 1/3 cup butter 2/3 cup evaporated cane sugar 1 tablespoon molasses 1 teaspoon vanilla 1/2 cup raisins Preheat oven to 350 degrees. Cream butter and sugar and egg. Then add vanilla. Mix together the flour and baking powder then add to the creamed ingredients. Roll into a medium sized ball and press lightly onto a greased cookie sheet. Bake for 10 minutes. You should be able to bake this entire batch on on regular sized pizza pan. They do spread some. If you have an egg allergy feel free to substitute 1 tablespoon of either soy flour or ground flax seed plus one additional tablespoon of water. If you have a dairy allergy use oil instead of butter. If you have a corn allergy be sure and use corn free baking powder. I forgot and use regular so the kids will have to eat this batch instead of us adults.
