Frugalishious Oatmeal Cookie Recipe
I hope these oatmeal-cookie-recipes are what you're looking for! I started making regular oatmeal cookies and then realized I didn't have any eggs. The flaxseed was a wonderful addition and we didn't even miss the eggs. MY pickiest child said he "hated them" but he ate 5 and didn't even pick out the raisins. These are a great secretly healthy treat for children.
1 cup brown sugar 1 cup white sugar 1 cup shortening 1/2 cup peanut butter 2 tablespoons of ground flaxseed 6 tablespoons water ( if you prefer use 2 eggs instead of flaxseed and water 1 teaspoon vanilla 2 tablespoons evaporated milk ( or 1 tablespoon evaporated milk and 1 tablespoon water any milk or even water will do) 2 cups flour 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 2 cups quick oats 1 cup raisins Cream the sugar and shortening. Add flax,water, vanilla and milk, or the equivalent substitutes. Make a well or depression in the center of the batter and add flour, baking powder, soda, and salt. Mix the dry ingredients together well and then stir into the batter. Stir in oats and raisins. Cook on greased cookie sheet at 350 degrees for approximately 7 minutes. You can tell they're done if you flip over one cookie and the bottom is brown. Let cool slightly before removing from the pan.
Butterscotchy Oatmeal Cookies

Add eggs and vanilla. Make a well or depression in the center of the batter and add flour, baking powder, soda, and salt. Mix the dry ingredients together well and then stir into the batter. Stir in oats, coconut and chips. Cook on greased cookie sheet at 350 degrees for approximately 7 minutes. You can tell they're done if you flip over one cookie and the bottom is brown. Let cool slightly before removing from the pan.
