Spelt-Recipes

Spelt-recipes? Thanks to Dr. Orchard of Idaho Falls, both John and I are on a no gluten, no corn, and no refined sugars diet for approximately 6 months. John has some actual allergy issues and I just have a yeast overgrowth. Our friend Jan here in town has been on a similar diet for about 6 months already but much stricter. She was a big help getting us started by giving us some spelt to try and also a loaf of spelt bread. She didn't make the bread herself because she only recently could use yeast. The bread used a sourdough starter for leavening and cost over $5 a loaf!!! Now I can share my new bread recipe with her! and I'll hopefully get her spelt-recipes for tortillas, etc.

After a little additional research I found out spelt actually is a variety of wheat, but one that seems to pass the gluten-free test as far as some people are not sensitive to it. Here's an expert definition of Spelt

Spelt Buns

1/2 cup apple juice

1/2 cup water

1 tablespoon oil

1 teaspoon salt

2 teaspoons Saf-Instant yeast

2 cups+ spelt flour

Warm juice and water on the stove until warm. Pour into bowl and add oil and salt and 1 cup of flour. The dough should be sticky and slightly warm. If hot let cool to lukewarm. Add yeast and mix. Add additional flour and knead until not sticky and it has a nice bread texture. I used an additional 1/4 cup of flour last night. Form into flat buns. Let rise in warm oven until they have raised moderately. Bake at 350 for 12 minutes or until nicely browned. Our first batch only took 10 minutes but we live at a high altitude. Let cool and serve with your meal. We used them for hamburger buns. Tasted like a nice whole wheat.

This recipe made 2 large buns and 4 small buns, or you could make 4 large buns or 8 small buns.

Oatmeal Spelt Cookies

3 cups oatmeal

1 cup spelt

1 teaspoon baking soda

1 teaspoon cinnamon

1/4 teaspoon nutmeg

dash of salt

1 cup all natural applesauce

7/8 cup honey

1 teaspoon vanilla

1/2 cup raisins

1/2 cup nuts

Mix dry ingredients; flour, oatmeal, soda, salt and spices. Make a well in the middle of the flour mixture and add the applesauce, honey and vanilla. Mix wet ingredients well and then mix into the flour. Add nuts. At this point I spoon out half the dough onto a greased cookie sheet in spoonful sized scoops. I then add the raisins and spoon out the rest onto cookie sheets. Bake at 325 degrees for approximately 10 minutes, or until lightly browned.

These are hearty healthy cookies that you could even feed your kids for quick breakfast along with hot cider. They are not terribly sweet and one child suggested we add chocolate chips. No wait, that was my hubby :)
